The simplest (and cheesiest) way to take down this boss is to be at the top of a building in a place where he's unable to reach your back while hitting the guy with projectiles. Magic projectiles are the best choice however bows and other throwables will get the job completed.

Near the Tree Sentinel's starting point is a huge, decaying structure that you can climb on top of. It's necessary to use your horse's jump on the corner, but once you're on top, you're safe. From here, just blast away with any projectile you can find to constantly cause harm. Remember, you could still be hit at by your boss. Therefore, make sure you use your shield when you are close to ensure that you don't sustain any injuries. Return to your position after your attack is successful, so that you stay clear of his sweeps.

Also, keep an eye out to look out for Tree Sentinel's magical counter, that absorbs any spells thrown at him and fire them back. This is signaled by the glowing, gold shield that appears before you hit. Another reason is that this boss may actually climb up on the structure occasionally but if you keep far from the area that you were using to climb on top, he'll have difficult time gaining access to you. If he is able to scale the structure, you can just walk away, and he'll be following you. You can then climb back and continue the process.
